Not your average deli, Rye Deli & Drink takes aspects of traditional Jewish fare, throws them into a smoker, and yields a tried-and-true craft infused with unexpected personality. The concept was born from the shared vision of Billy Caruso, chef and facilitator (24 Diner, Easy Tiger Bake Shop & Beer Garden, Hudson’s On The Bend), and Jeremy Vass, general manager (Chicago III Forks, Bel Air Country Club). Striking the ultimate balance between precise and rustic, Rye melds a distinct Jewish deli sensibility with contemporary cooking methods to provide a unique range of offerings.
The menu at Rye reflects the team’s prioritization of sourcing quality ingredients through homemade and handmade techniques. Rye’s artisanal bagels come to life from kneading with locally sourced heirloom wheat, baking in the hearth, and serving alongside house-smoked salmon and pastrami. These signature bagels pair with an array of surprisingly health-conscious and flavor-intensive accoutrements, from melted leeks & labneh to fava beans with preserved lemon and burnt eggplant. Staple menu items like the eight-hour cold-smoked salmon are altogether unorthodox, yet nostalgic. The menu expands beyond bagels and pastrami to highlight a variety of shareables, soups and sandwiches made with smoked meats, vegetables and fish.
Rye’s beverage program complements its specialty bread renditions, mirroring the creative yet classic character. Fueled by Vass and Caruso’s backgrounds as certified sommeliers, the pair use their expertise to curate an eclectic wine list, spotlighting picks with great value. Rye’s seasonal cocktails are styled for playfulness and versatility, designed with options to order individually or in bulk, and can be enjoyed either during in-person dining or to-go experiences. The beer offerings are made up of eight draft lines, featuring a rotating mix of local, seasonal, craft and rare brews.
